At $120 per meal, it was not inexpensive. The main issue that seems to be missed is basic business sense – the market for vegan restaurants is not very big.
Per a 2023 Gallop survey in the U.S., just 1% are vegan and 4% are vegetarian, down from 2%/6% twenty years earlier.
