She says we should eat amaranth grain.
Just 1% of the world’s amaranth supply is grown in the United States. This means most of us would have to eat imported amaranth that has been transported thousands of miles.
Amaranth is my go-to whole grain because it’s a plant-based protein powerhouse! One cup of cooked amaranth boasts an impressive 9 grams of protein.2 Unlike most grains, amaranth is a complete protein with a balanced composition of all nine essential amino acids, which are needed in sufficient amounts to build muscle, hormones, neurotransmitters and immune-supporting antibodies.
It does not contain any vitamin B-12.
Consuming amaranth is possible due to our global food production and transport system – which conflicts with supporting climate initiatives, which is now part of nutrition science too!
Very little in “nutrition” makes any sense.
